One of my favorite podcasts, though it certainly has a niche audience, is Blind Cool Tech (http://blindcooltech.com/). This one is kind of unusual, because there are submissions from many people. I listen mostly to the ones from Larry Skutchan, the guy who started it. Often he'll podcast his walks to and from work, using binaural microphones for realistic sound.
I also sometimes like Adam Curry's Daily Source Code (http://dailysourcecode.com/ for anyone who doesn't know).
