Help Me Pick a Game
In the recent past, I have finished Dragon Quest 8, Bahamut Lagoon, and Far Cry, basically flushing my game queue. So I'm looking for advice on what to play next. I'll give a list of games, but feel free to suggest others. Optimizing for fun divided by number of hours is best. For example, Katamari Damacy was supremely fun and short, giving it a very high enjoyment quotient. Here are the games, in no particular order:

- Xenogears
- Valkyrie Profile (if playing it before VP2 is important)
- Zelda: Majora's Mask
Help! (But there are always "eternal games", like Guild Wars and Gran Turismo that will consume all time in the meanwhile.)

Go for We Love Katamari. More of the same good stuff that was in the first name, with a bunch of little tweaks and more variety in the game types.
Twilight Princess is pretty awesome, as is Okami for PS2. God of War is a good game and is pretty short, so you can lump it in with something else.
Off the list, I'd say Half Life 2, because its incredible.
Off the list, WoW. You can probably get a package with the expansion in a month or so anyhow. If you ask nice, I might re-roll Horde if you're into that sort of thing.

Minus WoW, that seems to be a winner.
I highly recommend Final Fantasy 12 and God of War.
Devil May Cry 3 was pretty good, but not nearly as good as the first one.
Just saw Kessian's reply about WoW. If Aegis starts playing WoW, it will be on Runetotem as Alliance! Don't you go trying to steal my potential new player; I've been working on him for a bit. :)
Unfortunately, I don't think I'll be doing WoW... I don't need another "eternal" game just yet. But I'm surprised there's no convergence yet. Half-Life 2, God of War, or We Love Katamari...
Ico and Shadow of the Colossus are both excellent choices since they are both short and awesome.
The games I've most recently played are Half-Life 2 and Shadow of the Colossus. Half-Life 2 is great but maybe a little bit too similar to Far Cry. Shadow of the Colossus is a masterpiece. You know how a lot of game dev projects never get around to all the cool finishing touches before shipping (like your character calling his horse louder when it's farther away)? Shadow of the Colossus didn't have that problem. Ya, I'd recommend that one.

Have you played Thief 3? If not, I highly recommend it. You can get it for like $20 now, and it's much easier to enjoy on a modern machine that can actually handle the god-awful engine.
$20 games are the best!
By no means will Chrono Cross rank first if the formula is fun / time. However, it is still a great RPG. If I were to pick the top PS1 RPGs, Chrono Cross would contend with FF9 in my estimation. It is certainly better than Xenogears and Valkyrie Profile. I won't dive into a pro/con list, but suffice to say Chrono Cross has what I consider the best turn-based game mechanics.
My $0.02, but I am not qualified since I have not played (or even seen) the majority of games on your list.
